Have your matcha sample ready. You'll evaluate it dry (colour, texture, aroma) and after a quick whisk (taste, froth). Natural light helps for colour assessment.
Always sift 1–2g of matcha through a fine mesh sieve into your bowl (chawan). This breaks up clumps and ensures a smoother, lump-free suspension.
Water temperature matters deeply. For ceremonial grade: 70–75°C. Premium: 75–80°C. Never boiling — excessive heat denatures the amino acids and invites bitterness.
Add just 15ml of warm water to the sifted matcha. Stir with the chasen to form a smooth, dark paste. This step prevents lumps in the final bowl.
Add remaining hot water (60–75ml). Whisk vigorously in a rapid W or M motion until fine foam forms on the surface.
Matcha is best consumed right away. Hold the bowl with both hands, rotate it gently, and drink in the stillness of the moment.
The difference between 70°C and 90°C can mean the difference between umami sweetness and harsh bitterness. Use a thermometer or let boiled water sit for 5 minutes.
The final 3–4 weeks of shading before harvest boosts chlorophyll and L-theanine. Higher shade time = higher grade.
Keep matcha in an airtight, opaque container away from light, heat, and moisture. Refrigerate after opening. Use within 4–6 weeks for peak flavour.
